Did you know that potatoes need low acid soil (pH of 5.0 – 5.5)? This makes them different from many other common vegetables which typically need neutral to slightly acidic soil to thrive.

Did you know that potatoes go with almost any dish? From baked to fried to scalloped to hash to shredded (potato cakes), this versatile tuber can satisfy almost any taste profile or appetite.

Did you know that potatoes are grown from “seed pieces” or pieces of whole potatoes? Each “seed piece” must have at least one eye to sprout. Don’t use supermarket potatoes as they have been chemically treated to not sprout.

Did you know that covering potato plant leaves and stems as the plant grows will encourage more/new tuber growth? Typically, each plant will produce between three and six “regular” sized potatoes and multiple smaller ones. Harvest potatoes when the plant blooms or when leaves begin to turn yellow.

Did you know that potatoes are related to tomatoes, eggplant and peppers? Potatoes originated in higher altitudes and prefer cooler evening/nighttime temperatures.
